Tuna Salad in Avocado Shell

Do you have trouble finding a tuna recipe that your family will eat?  Does your family like avocado?  Do you want something that can be made in 5 minutes?  This recipe is something I found recently and my family will eat it even though they dislike tuna in most other recipes.  They all love avocado.

Ingredients for a family of 5

4 Avocados

1 T lemon juice or to taste

1/2 tsp salt and pepper (to taste)

1 12 oz can tuna, canned in water, drained

1/2 small yellow onion chopped

Instructions

1. Cut the avocados in half and discard the pit.

2. Scoop the middle of avocado halves into a bowl, leave a shell of avocado flesh about 1/4 inch thick

3. Add lemon juice and onion to the avocado in the bowl and mash

4. Add tuna, salt, and pepper.

5. Stir to combine.

6. Taste and add additional salt, pepper, or lemon juice as needed.

7. Fill avocado shells with tuna salad.

With 8 halves we serve 2 to each adult and the oldest child and one each to the two younger children.  If you have a different number of children you may need to adjust the amounts.  Instead of 12 oz tuna, you could use a 5oz can for 2 people or 2 5oz cans for 4.  Use the number of avocados needed to get the halves you want for each person.  Adjust the other 3 ingredients to taste.  Don’t like onion then decrease it a little.
